This is one of my favourite cookie recipes inspired by Alison Roman’s salted chocolate chunk shortbread cookies. They make a wonderful Christmas gift, but are also perfect to pair with your tea or coffee.
Gluten-free Sticky Date Pudding
Warm sticky date pudding served with butterscotch sauce and vanilla ice cream is a perfect dessert for the winter. This version is gluten-free, and extremely easy to make.

This is a gluten-free version of one of my favourite Arnott’s biscuits, the Monte Carlo. It consists of two shortbread biscuits sandwiched together with a vanilla buttercream and raspberry jam.

These gluten-free eclairs feature a craquelin topping and are filled with a vanilla Chantilly cream and finished with chocolate.
No-bake Lemon and Peach Cheesecake
This blogpost is a slight variation of a no-bake cheesecake recipe I’ve done in the past. It is absolutely delicious with its buttery biscuit base and light creamy filling flavoured with lemon zest and hints of sweet peaches.
