My family and I typically have french toast for breakfast every Sunday morning, and it is the perfect, indulgent way to start the day.
For this recipe, you can use any bread that you prefer such as a rich brioche loaf or standard white bread. The more stale the bread is the better, as this allows the egg/milk mixture to absorb well into the bread.
I like to serve this french toast with maple syrup and bacon for a sweet/salty combination. You can of course serve it with berries (as pictured here), caramelised banana, a berry compote and poached/roasted fruit. The possibilities are endless!
French Toast

- 7-8 slices of brioche bread or white sandwich bread, stale
- 2 eggs
- 120ml milk
- 1/2 tsp cinnamon
- 1/2 tsp vanilla bean paste
- 30g butter, to cook
- Maple syrup, to serve
- In a medium bowl, whisk together the eggs, milk, cinnamon and vanilla extract.
- In a non-stick pan/skillet, melt 15g of butter over medium heat.
- Dunk the slices of bread into the egg mixture, one at a time, coating both sides generously.
- Place bread slices onto the pan, ensuring not to over crowd it, and cook for approximately 2 to 3 minutes each side.
- Add more butter to pan, and cook the remaining slices of bread.
- Serve with maple syrup.
