Gluten-free Almond and Oatmeal Chocolate Chip Cookies {Karlie’s Kookies Recipe}

I was actually inspired by supermodel, Karlie Kloss, to make these cookies. They are gluten-free, dairy-free and also vegan. Instead of using flour, butter, sugar or eggs; these ingredients are substituted with almond meal, olive oil and agave. So they’re pretty healthy and nutritious but more importantly delicious as well.img_33321
Karlie Kloss collaborated with Momofuku Milk Bar’s Christina Tosi to create these charitable cookies named the Perfect 10, and through the organisation named FEED – they provide meals to those in need around the world.

So these cookies are really easy to make and taste as good as normal cookies. They are very chewy and have nice nutty flavour due to the toasted almonds and almond meal. With it being gluten-free/dairy free – you can now eat cookies without feeling guilty! I recommend you give them a go.

 

Gluten-free Almond and Oatmeal Chocolate Chip Cookies {Karlie’s Kookies}

Recipe adapted from Karlie Kloss and Christina Tosi.
Makes approximately 18 medium cookies. 

Ingredients
  • 3 1/2 cups almond flour
  • 2 cups gluten-free oats
  • 1 tsp kosher salt
  • 1/2 tablespoon cornstarch
  • 1/4 tsp baking soda
  • 1 teaspoon baking powder
  • 1/2 cup slivered almonds, toasted
  • 3/4 cup dairy-free dark chocolate chips
  • 3/4 cup olive oil
  • 1/2 cup agave or maple syrup
  • 1 1/2 tablespoons vanilla extract
Method
  1. Heat the oven to 160 C and line trays with baking paper.
  2. Combine the almond meal, oats, salt, cornstarch, baking soda, baking powder and toasted almonds in a large mixing bowl and stir well. Whisk together the olive oil, a gave and vanilla extract in a smaller bowl.
  3. Make a well in the middle of the dry ingredients and pour in the wet ingredients.
  4. Mix with a rubber spatula until a soft crumbly dough forms and everything is well incorporated.
  5. Knead the dough gently and roll in between two pieces of baking paper. It should be half an inch think (about 1cm).
  6. Cut out cookies with a 5cm/2 inch ring mold and transfer them onto lined baking trays.
  7. Bake the cookies for about 12-15 minutes or until the cookies are slightly browned around the edges.
  8. The cookies will be soft so leave them to cool completely on the baking trays.
  9. Then serve and enjoy!
